It’s a busy September at IOC!

Also… how is it September already?!

It's been a gorgeous summer on Casco Bay. We've spent a lot of time on the water, the oysters have been growing, and somehow we're already heading into the last stretch of our season.

We'll only be selling through the end of October this year, so if you've been meaning to get some Indigo oysters...now's the time!

Big, Bigger, Biggest

One of the things we love about oysters is that no two are exactly alike.

We recently harvested out of one bag and while the vast majority of the oysters were hanging out in the 2–3" zone, we found a few absolute big mama-jamas in there.

Same age.

Same bag.

Same water.

Totally different sizes.

There can be a surprising amount of variation in oyster growth, even among oysters growing right next to each other. Genetics plays a role, but so do things like access to food, water flow, crowding and where an oyster happens to be sitting in the bag.

And apparently some of these guys are just READY TO GROW.

We love seeing the variation that comes out of a single bag. It's a good reminder that these are living things doing their own thing out there—not widgets coming off an assembly line.

Fresh Oysters, Anyone?

We're currently harvesting twice a week, which means there are plenty of opportunities to get your hands on some really fresh oysters.

If you want some, shoot us an email and we'll add your order to our next harvest. We can also arrange a Portland pickup if that's easier for you.

And we'll be back at the Scarborough Farmers Market this Sunday, September 13, from 9am–1pm. Come say hello and grab some oysters! Our regular market schedule runs through October.

Indigo Oysters Are Getting Out Into the World

One of our big goals this year has been figuring out how to get our oysters into more people's hands—and we're making some progress!

You can now find Indigo oysters at Fish & Whistle in Biddeford and at Lady Oyster's The Parlor in Bath.

Fish & Whistle is a Maine-focused seafood spot at 299 Main Street in downtown Biddeford, and Lady Oyster's Parlor at 1 Shaw Street in Bath is a tiny four-seat oyster tasting room and retail market featuring oysters from Maine farms.

We're pretty excited to see Indigo oysters making their way out into the world.

Orange Bike Brewing — September 12 & 19

We'll be shucking oysters from 12–4pm at Orange Bike Brewing in Portland on September 12th and 19th.

September 12 is Orange Bike's GF Fall Expo, and September 19 is Oktoberfest—so come grab a beer and let us shuck you some oysters.

We're also excited to be participating in Melanin's Up (More Women + Surf)!

This is all about getting people outside, on the water, and creating community—and we're pretty psyched that oysters get to be part of it.

New England BIPOC Fest — September 27

We'll be heading down to Portsmouth, New Hampshire to shuck at the New England BIPOC Fest on Sunday, September 27 at Strawbery Banke Museum.

This is a food festival at heart, bringing together BIPOC-owned restaurants and chefs along with small businesses, nonprofits, artists, musicians and cultural performers from around New England. It's family-friendly, admission is free, the food is free, and everyone is welcome. The organizers suggest a $10 donation for those who are able.
